As vivências em torno dos engenhos de cana-de-açúcar, sejam elas enquanto proprietários,
trabalhadores ou visitantes compreendem parte importante da história do povo caririense. Os
engenhos têm participação fundamental no desenvolvimento da região, construiram a cultura doceira
e estabeleceram memórias indeléveis nos que viveram essas experiências.
Esse trabalho tem como objetivo geral compreender a importância histórica e cultural da
presença dos engenhos e seus produtos primários na memória social e afetiva dessas pessoas. Os
objetivos específicos visaram identificar a importância histórica, social e econômica dos engenhos na
cultura alimentar do Cariri; registrar o preparo dos doces de tacho, assim como, avaliar o seu grau de
pertencimento na contemporaneidade.
Através de pesquisa qualitativa, foi aplicada uma entrevista semi-estruturada, que permitisse
expressões espontâneas nos relatos. Destacamos a oralidade como componente fundamental para
melhor captar as emoções e a fidelização dos fatos (KAUFFMAN, 2012). O declínio dos engenhos, a
perda desses convívios e o possível apagamento do passado, faz-nos entender a necessidade que
há em registrar esses acontecimentos, para que eles se perpetuem como parte integrante e importante
da história local.
Compreender que os engenhos e a doçaria regional, emblemáticos na cultura da região, elucidam
narrativas em torno dos engenhos e histórias de casas de doces que resistem, constitui um
contributo para a compreensão dessa identidade cultural.
The experiences around sugarcane mills, whether as owners, workers or visitors, comprise an important part of the history of the Caririense people. The mills have a fundamental participation in the development of the region, built the sweet culture and established indelible memories in those who lived these experiences. This work has as general objective to understand the historical and cultural importance of the presence of the mills and their primary products in the social and affective memory of these people. The specific objectives aimed to identify the historical, social and economic importance of the mills in cariri's food culture; record pot candies and their preparations, as well as evaluate their degree of belonging in contemporaneity. Through qualitative research, a semi-structured interview was applied, which allowed spontaneous expressions in the reports. We highlight orality as a fundamental component to better capture emotions and the loyalty of facts (KAUFFMAN, 2012). The decline of these devices, the loss of these convivialities and the possible deletion of the past, makes us understand the need for recording these events, so that they can be perpetuated as an integral and important part of the local history. Understanding that the mills and regional sweets are emblematic in the culture of the region, as they elucidate narratives around the mills and stories of candy houses that resist, is a contribution to the understanding of this cultural identity.
