Resumo(s)
This research examined the role of digitalization and consumer behavior in combating food
waste in hospitality. To evaluate the hypothesis of the adoption of sustainable practices to
reduce food waste being dependent on the industry's ability to find economically feasible
solutions that do not compromise convenience or quality for consumers, a survey and expert
interviews were conducted. Different digital solutions were explored to minimize costs and
risks throughout restaurants’ progression to more sustainable operations. The findings of this
study suggested that customers’ increased awareness and environmental concern will drive
demand for restaurants to increase their efforts in reducing their impact.
