Resumo(s)
The qualitative research consists of the preliminary expert and consumer interviews with the
purpose of validating the findings of the literature review and get first impressions of the current
market situation and consumer perceptions. Both interviews added value to the literature review
and generated specific knowledge on the German market. The consumers’ perception is often
characterized by disgust but also by quality, being healthy, and sustainable. There is low to no
perception about insect-based food due to lack of knowledge about entomophagy, its benefits and
missing prevalence in retail stores.
