Circular economy represents an increasingly attractive model employed by organizations to address present and future environmental challenges. In a Case Study, Delta Cafés’ incorporation of NÃM’s circular economy practices, reusing spent coffee grounds to produce fresh mushrooms and organic fertilizer, is examined. The pioneering partnership between NÃM and Delta Cafés is further explored in an individual Teaching Note. Finally, a Project Evaluation Report was developed to provide recommendations to Delta Cafés on how to increase the amount of coffee waste upcycled, within the scope of its partnership with NÃM and of different economically viable circular economy initiatives.
