Controlo Analítico: avaliação e oportunidades de melhoria no controlo de frutas e vegetais

Atualmente, a utilização de pesticidas na agricultura é um tópico de preocupação na área de Qualidade e Segurança Alimentar, uma vez que a principal via de exposição aos resíduos de pesticidas é através do consumo de produtos alimentares, nomeadamente frutas e vegetais.
Com o propósito de avaliar a eficácia dos controlos e monitorizações realizados às frutas e vegetais comercializados nos estabelecimentos Jerónimo Martins, concretizou-se um estudo ao plano de controlo analítico dos anos 2020, 2021 e 2022. Para tal, procedeu-se ao tratamento dos dados disponibilizados - de modo a analisar a incidência de resultados não conforme durante os três anos e recomendar possíveis oportunidades de melhoria. O estudo desenvolvido centrou-se principalmente na presença de resíduos de pesticidas nas frutas e vegetais, uma vez que esta é a principal causa dos resultados não conforme detetados.
Deste modo, conclui-se que os produtos alimentares que não cumprem com a legislação em vigor, relativamente à presença de resíduos de pesticidas, apresentam substâncias ativas acima do LMR (Limites Máximos de Resíduos) estipulado pela UE ou exibem substâncias ativas não autorizadas em Portugal para a cultura em questão.
Posteriormente, efetuou-se uma análise de risco ao processo de produção primária de frutas e vegetais, onde se identificaram as principais causas para a presença de resíduos de pesticidas. Recomendaram-se medidas de controlo adicionais que devem ser adotadas pelos fornecedores, de forma a mitigar o risco.
Por fim, comprovou-se que o plano de controlo analítico, as monitorizações e controlos realizados às frutas e vegetais pelo Departamento de Qualidade e Segurança Alimentar não devem ser alterados.
Nowadays, the increasing use of pesticides in agriculture is a topic of concern in Food Quality and Safety, since the main source of exposure to pesticide residues is through the consumption of food products, especially fruits and vegetables. In order to assess the effectiveness of controls and monitoring performed on fruits and vegetables sold in Jerónimo Martins’ establishments, a study was carried out on the analytical control plan for 2020, 2021 and 2022. To achieve this, the available data was analyzed, so as to study the incidence of non-compliant results during the three years, regarding the presence of pesticide residues in fruits and vegetables and to recommend possible opportunities for improvement. As a result, it was determined that food products that do not comply with specifications either contain active substances above the MRL (Maximum Residue Limits) stipulated by the EU or contain active substances that are not authorized in Portugal. Furthermore, a risk analysis was implemented on the primary production process of fruits and vegetables, identifying the main causes for the presence of pesticide residues. Additional control measures that should be adopted by suppliers to mitigate the risk were recommended. Finally, the analytical control plan and the monitoring and controls carried out on fruits and vegetables by the Department of Quality and Food Safety were proven to be effective.
