O presente estudo explora a imagem dentro do universo do doce conventual português a partir
das suas relações de intercâmbio com outra cultura, no caso desse, a região de Pelotas no extremo
sul do Brasil, dentro de uma metodologia da antropologia visual/cultural da fotografia na pesquisa
etnográfica e se utilizando do conceito p&b para realçar a temática da doçaria conventual
portuguesa e sua influência em termos de desenvolvimento nos dias atuais na região brasileira.
Esta pesquisa se propõe a explorar como temática em termos imagéticos essa influência cultural
e gastronômica da doçaria conventual portuguesa em uma comunidade onde atualmente o doce é
produto econômico e turístico, entendendo e exibindo finalmente através da fotografia p&b com
seu valor psicológico/artístico/documental agregado, o grau de envolvimento e de repercussão
social afetiva que proporcionou nos dias atuais por inspiração e aculturamento. Tendo como
instrumento etnográfico principal a fotografia, explorando as potencialidades do conceito
fotográfico que percorre todos os tons de cinza entre o preto e o branco, fazendo uma ligação
imagética de tempo e espaço cultural no universo das tradições doceiras portuguesas que
atravessaram oceano e transformam-se, enraizando-se em outro povo e proporcionando um rico
intercâmbio, e, neste caso especialmente, desenvolvimento e novos conceitos e aplicações do
conteúdo viajado, fazendo assim o doce conventual português, hoje, através de um gênero de
herança afetiva emocional, modo de vida em outro continente, em forma de receitas e modos de
fazer. Os personagens desta pesquisa são, no Brasil, o fazer e a produção dos doces
confeccionados por membros da comunidade pelotense, portugueses descendentes ou não,
envolvidos com a cultura do doce na região como produtores da doçaria tradicional da cidade do
doce. O requisito fundamental para se classificar como imagem relevante na pesquisa é ter
diretamente uma relação com a indústria doceira, seja os próprios doces antes e depois de prontos,
ou as mãos produtoras deste universo de açúcar e ovos do qual partem todos as variações. No
final desse processo, a temática foi ilustrada com o conteúdo imagético e psicológico retratando
a afetividade contida nas relações socioculturais e culinárias.
The present study explores the image within the universe of Portuguese conventual sweets based on its exchange relationships with another culture, in this case, the region of Pelotas in the extreme south of Brazil, within a methodology of visual/cultural anthropology of photography in ethnographic research and using the b&w concept to highlight the theme of Portuguese conventual sweets and its influence in terms of current development in the Brazilian region. This research proposes to explore as a theme in imagery terms this cultural and gastronomic influence of Portuguese convent sweets in a community where sweets are currently an economic and tourist product, finally understanding and displaying through b&w photography with its added psychological/artistic/documentary value, the degree of involvement and affective social repercussion that it provided today through inspiration and acculturation. Having photography as the main ethnographic instrument, exploring the potential of the photographic concept that covers all shades of gray between black and white, making an image connection between time and cultural space in the universe of Portuguese sweet traditions that crossed the ocean and were transformed, taking root in another people and providing a rich exchange, and, in this case especially, development and new concepts and applications of the traveled content, thus making the Portuguese conventual sweet, today, through a genre of emotional affective heritage, way of life on another continent, in the form of recipes and ways of doing things. The characters of this research are, in Brazil, the making and production of sweets made by members of the Pelotas community, Portuguese descendants or not, involved with the sweet culture in the region as producers of traditional sweets from the city of sweets. The fundamental requirement to be classified as a relevant image in the research is to have a direct relationship with the sweet industry, be it the sweets themselves before and after they are ready, or the hands that produce this universe of sugar and eggs from which all the variations come. At the end of this process, the theme was illustrated with imagery and psychological content portraying the affectivity contained in sociocultural and culinary relationships.
