Resumo(s)
The increasing global population, climate change crises, and the ongoing food security
challenges have intensified the search for sustainable and innovative food sources. Edible
insects present a viable solution, offering significant nutritional, environmental, and economic
benefits. However, Western societies exhibit resistance toward entomophagy due to cultural
and psychological barriers. Through an experimental design involving a sample of 227
Portuguese individuals, this research explores how packaging claims - nutritional versus
sustainable - affect consumer acceptance and willingness to buy insect-based products,
specifically cricket protein powder, evaluating the role of disgust as a mediating variable.
Results revealed that participants exposed to nutritional claims were more willing to buy
cricket protein powder than those exposed to sustainable claims. Mediation analysis further
revealed that disgust significantly influenced willingness to buy, highlighting its mediating role
in consumer decisions. These findings suggest that emphasizing nutritional benefits over
sustainability claims can help diminish consumer aversion and increase willingness to buy
insect-based products. This research significantly contributes to the existing literature on
sustainability goals and consumer behavior by providing novel insights into the role of
packaging claims in consumer acceptance of insect-based products. It not only provides
theoretical implications but also offers practical insights for businesses, enabling enterprises
to develop effective packaging strategies that enhance consumer acceptance and drive the
adoption of insect-based products in mainstream markets.
