A certificação dos Sistemas de Gestão da Segurança Alimentar, com recurso a referenciais
normativos, tem vindo a tornar-se imprescindível para as empresas do setor alimentar pois, cada vez
mais, estes referenciais são exigidos como reforço de garantia da produção segura de alimentos e
bebidas. Para além disto, também a crescente preocupação generalizada com a Segurança Alimentar
veio impulsionar, de certa forma, a necessidade de implementação destes referenciais nas empresas
da Indústria Alimentar.
Hoje em dia, muitas empresas do setor alimentar, incluindo retalhistas, especificam
determinados referenciais como requisito fundamental para os seus fornecedores de produtos
alimentares, nomeadamente o Global Standard for Food Safety, desenvolvido e publicado pelo British
Retail Consortium, principal objeto de estudo do presente trabalho.
Este referencial constitui um fator de diferenciação, proporcionando às empresas um aumento
da competitividade no mercado global, uma vez que permite a exportação para todo o mundo, por
exemplo para empresas situadas no Reino Unido e, ao mesmo tempo, aumenta a credibilidade junto
dos clientes e consumidores.
A José Maria da Fonseca Vinhos, S.A. é certificada pelo BRC Global Standard for Food
Safety Issue 7, a versão atualmente em vigor, tendo sido propostas e implementadas várias
melhorias no Sistema de Gestão da Segurança Alimentar, relacionadas com os Equipamentos de
Proteção Individual, Manual de Boas Práticas, Controlo de Pragas, entre outros, incluindo também a
elaboração de uma checklist para as auditorias internas, numa ótica de melhoria contínua, conforme
imposto pelo referencial.
Tendo em vista a publicação da próxima versão, Issue 8, algumas das ações de melhoria
implementadas na empresa já consideraram as principais alterações propostas na nova revisão deste
referencial.
The certification of the Food Safety Management System by food safety standards has become essential for food companies mostly because these standards are often required as a guarantee of a safe food and beverage production. Beyond this, the growing concern with Food Safety issues has increased the need of standards implementation in the Food Industry companies. Nowadays many food companies, including retailers, specify certain standards as a fundamental requirement for their food suppliers, namely the Global Standard for Food Safety, developed and published by the British Retail Consortium, the main subject of this study. This standard consists in a differentiation strategy that provides a higher competitiveness in the global market since it allows exporting worldwide, for example companies from the United Kingdom as well as it increases customer and consumer confidence. José Maria da Fonseca Vinhos, S.A. is certified by BRC Global Standard for Food Safety Issue 7, the current version, and according to the aim of this study has been proposed and implemented several improvements in the food management system. The implementation of these improvements related to Personal Protective Equipment, Good Manufacturing Practices, Pest Control, among others, and also a checklist to be used in the companies’ internal audits, has been promoting a continuous improvement of the management system, as required by the standard. Since Issue 8 is now being developed and it will be published soon, some of the proposed and implemented improvements have already considered the main changes in the new review of this standard.
