Resumo(s)

This project seeks to develop a software solution specifically tailored to address sustainability challenges by enhancing the overall efficiency of the food and beverage value chain within both restaurant and hotel operations. The system aims to reduce food waste and minimize the environmental footprint of these establishments. By harnessing cutting-edge information technologies, this research further aspires to equip chefs, restaurant managers, and hotel food and beverage professionals with advanced tools that support their success in an increasingly competitive and sustainability-driven market. At the core of the proposed solution lies a dynamic recipe repository, which serves as the foundational structure of the system. In addition to this central component, the software will integrate functionalities from existing and well-established platforms such as Point of Sale (POS) systems, which are widely used in both restaurants and hotel dining services. These systems will provide valuable transactional data that will be cross-referenced with recipe records to automatically generate comprehensive ingredient lists. Furthermore, the incorporation of modern technologies such as Optical Character Recognition (OCR) will significantly streamline and expedite operational processes. OCR will be employed to extract data from supplier invoices, allowing for the automatic updating of ingredient prices and, consequently, real-time calculation of recipe costs. This capability will enable food and beverage professionals in both restaurant and hotel settings to access accurate and up-to-date information, empowering them to make informed decisions and implement effective pricing strategies.
