"Common beans (Phaseolus vulgaris L.) are one of the most important foods to populations’ survival worldwide, being fundamental for the development of sustainable farming systems, environment protection, human/ animal nutrition improvement and health promotion. Despite of the several advantages, common beans’ production and consumption are far behind the recommendations that aim to counteract malnutrition and support food security in the world. Throughout this thesis several studies aiming to fulfil gaps of knowledge, from common beans’ production to common beans’ consumption and applicability by food industry were pursued, bringing through a multidisciplinary view new insights that ultimately will enhance common beans’ production and consumption.(...)"
